My famous "Burrito Casserole" aka Enchiladas

This is my take on Enchiladas yet totally different but its quite yummy.

  • 1_1/2 lbs of Ground Beef
  • Spices: Salt, Pepper, Garlic (a pinch or to taste)
  • my Secret Ingredients (sorry ladies)
  • 3 Green Onions, finely chopped
  • 27 oz Enchilada Sauce (1 can)
  • Flour Tortillas
  • 8 oz of shredded cheese, your fav (I used Cheddar)
  • 2.2 QT / 2 LT Casserole baking dish
  • Large/wide bowl
Add all seasoning to ground beef while browning. Once beef is almost brown, add green onions & minced garlic so not to burn. Drain all excess oil. Pour enchilada sauce into X-Large bowl (do not heat!). Pre-heat oven at 400.
Get ready because this is the messy part- If u wear french acrylic nails, wear gloves as the enchilada sauce WILL stain. Get a tortilla & very lightly dip front & back in the sauce. Scoop beef into the wet tortilla, sprincle cheese then roll into a burrito. Repeat this process until the casserole dish is filled (1 layor only). Pour the excess enchilada sauce, sprincle more cheese generously, & sprinkle more beef on the top of the burritos. Place the dish in the oven. Everything has been cooked so you will only need to melt the cheese so don't walk away, this dish will be done in minutes.
