Spanish Rice "Arroz"

This is my take on my Grandmothers "Arroz" aka Spanish Rice.

  • 1 cup long rice (1 part rice/2 parts water)
  • 8 oz tomato sauce
  • 2 cup water
  • olive oil
  • pepper & garlic (a pinch or to taste)
  • My Secret ingredient
  • 1/4 of a Yellow Onion (optional)
  • Mixed Veggies Canned 1 (optional)
    On high, heat EVOO in a large non-stick pan. Pour 1-cup of rice into oil & lightly brown stirring constantly. Once the rice has absorbed most of the oil, add tomato sauce/stir, add water/stir, add seasonings/stir, then cover. Lower to medium heat.
    • Continue to stir occasionally to avoid sticking &/or burning.
      Once the rice has absorbed all the liquid, roughly around 5-8 min's, taste to make sure the rice is soft, then its time to eat =)~
